1 can (15 oz) chickpeas, drained and rinsed

1 can (15 oz) cannellini beans, drained and rinsed

1 cup vegetable broth

1 cup diced tomatoes (canned or fresh)

1 medium onion, chopped

3 cloves garlic, minced

1 medium carrot, diced

1 medium celery stalk, diced

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon cumin

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil, for garnish

Optional: Crusty bread for serving

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes, until the vegetables are softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced tomatoes, chickpeas, cannellini beans, vegetable broth, oregano, cumin, and smoked paprika to the pot. Stir well to combine all the ingredients.

        Bring the mixture to a gentle simmer and reduce the heat to low. Cover the pot and let it cook for 20-25 minutes, allowing the flavors to meld.

          After simmering, stir in the fresh spinach and season the soup with salt and pepper to taste. Cook for an additional 2-3 minutes until the spinach is wilted.

            Remove the soup from heat and let it cool for a few minutes. Before serving, taste and adjust the seasoning if necessary.

              Serve hot in bowls, garnished with fresh basil. If desired, accompany with slices of crusty bread for dipping.
