8 ounces of sliced pastrami (preferably hand-cut)

2 slices of rye bread (fresh and sturdy)

2 tablespoons of Dijon mustard

1 slice of Swiss cheese (optional)

1 dill pickle, sliced (for garnish)

Freshly cracked black pepper (to taste)

Instructions
 

Begin by preheating a skillet or griddle over medium heat.

    While the skillet heats, take the two slices of rye bread and spread one tablespoon of Dijon mustard on each slice.

      Layer the pastrami generously on one slice of the bread, over the mustard. If using, add the slice of Swiss cheese on top of the pastrami.

        Carefully place the second slice of bread, mustard side down, on top of the sandwich to complete it.

          Once the skillet is warm, place the assembled sandwich onto the skillet. Use a spatula to press down gently.

            Grill the sandwich for about 4-5 minutes or until the bread is golden brown and crispy.

              Carefully flip the sandwich and grill the other side for another 4-5 minutes, ensuring the cheese melts and the pastrami is heated through.

                Once both sides are perfectly toasted, remove the sandwich from the skillet and let it rest for a minute.

                  Slice the sandwich in half diagonally, and serve it with the sliced dill pickle on the side, garnished with a sprinkle of cracked black pepper.
