Ingredients
  

2 cups all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1 large egg

1/2 cup finely chopped walnuts or hazelnuts

1/2 cup confectioners' sugar (for dusting)

1/2 teaspoon ground cinnamon (optional)

Zest of 1 lemon (optional)

Instructions
 

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add the egg and vanilla extract to the butter mixture, and mix well until combined.

      In another bowl, whisk together the flour, salt, and optional cinnamon and lemon zest.

        Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

          Once the dough is formed, fold in the chopped nuts until evenly distributed.

            Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up.

              Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

                On a floured surface, roll out a small portion of dough to approximately 1/8 inch thick.

                  Cut the dough into rectangles of about 2x4 inches. Place a spoonful of chopped nuts in the center of each rectangle.

                    Roll the dough over the filling to create a log shape, sealing the edges well to avoid any filling leakage during baking.

                      Place the rolls onto the prepared baking sheet and bake for 15-18 minutes, or until lightly golden.

                        Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

                          Once cooled, dust the cookies with confectioners' sugar. For a final touch, you may sprinkle a bit more chopped nuts on top.
