1.5 lbs (680g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

1 tablespoon apple cider vinegar

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional for heat)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Marinade: In a bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, olive oil, red pepper flakes (if using), salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it's fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours or overnight for maximum flavor.

      Cook the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Remove the chicken from the marinade (reserve the marinade for later) and place it on the prepared baking sheet.

        Bake the Chicken: Bake the chicken in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the edges are nicely caramelized.

          Prepare the Glaze: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer. Cook for about 5-7 minutes until it thickens slightly.

            Glaze the Chicken: Once the chicken is done, remove it from the oven and brush the thickened glaze over the top. Return to the oven for an additional 5 minutes.

              Serve: Remove the chicken from the oven, let it rest for a few minutes, then slice if desired. Garnish with sliced green onions and sesame seeds before serving.
