Creamy Sun-Dried Tomato Salmon Recipe

Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon lemon zest

1 tablespoon lemon juice

1/2 cup parmesan cheese, grated

Instructions
 

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down, and sear for about 4-5 minutes. Flip the salmon and cook for another 2-3 minutes until brown and cooked through. Remove the salmon from the skillet and set it aside.

      Make the Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and cook for 1-2 minutes.

        Add Cream and Seasoning: Pour in the heavy cream, stirring well. Add the lemon juice, lemon zest, and grated parmesan cheese. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.

          Finish the Dish: Return the seared salmon to the skillet, spooning the creamy sauce over each fillet. Cook for an additional 2 minutes to allow the flavors to meld. Finally, add the chopped basil just before serving.

            Serve: Plate the salmon and generously drizzle the creamy sun-dried tomato sauce over the top.
