1 bag (32 oz) frozen tater tots

1 pound bacon, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

8 large eggs

1 cup whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

    In a large skillet, cook the diced bacon over medium heat until crispy. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the bacon grease in the skillet.

      In the same skillet with the bacon grease, add the tater tots and cook for about 5-7 minutes until golden brown and crispy. Stir occasionally to ensure even cooking.

        Spread the cooked tater tots evenly across the bottom of the greased baking dish.

          Sprinkle the cooked bacon on top of the tater tots, followed by an even layer of both shredded cheeses (cheddar and mozzarella).

            In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

              Pour the egg mixture evenly over the tater tots, bacon, and cheese layers, ensuring everything is nicely soaked.

                Use a spatula to gently press down on the tater tots and toppings to make sure the egg mixture penetrates all the layers.

                  Bake in the preheated oven for 35-40 minutes or until the eggs are set and the top is golden and bubbly.
