1 lb boneless, skinless chicken breasts

1 cup long-grain white rice

1 large onion, diced

2 garlic cloves, minced

3 medium carrots, sliced

2 celery stalks, sliced

6 cups chicken broth

2 lemons (zested and juiced)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1 cup baby spinach or kale

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic, sliced carrots, and celery to the pot, sautéing for another 5 minutes until the vegetables begin to soften.

      Season the mixture with salt, pepper, thyme, and oregano, stirring to combine.

        Add the chicken breasts to the pot along with the chicken broth. Bring the soup to a gentle simmer and cook for 15-20 minutes, or until the chicken is fully cooked (internal temperature of 165°F/75°C).

          Remove the chicken from the pot, and once cool enough to handle, shred it using two forks. Set aside.

            Stir in the long-grain white rice into the soup and let it simmer for another 15 minutes or until the rice is tender.

              Return the shredded chicken to the pot and add the lemon juice and zest. If using baby spinach or kale, stir it in at this point and let it wilt for about 1-2 minutes.

                Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.

                  Serve hot, garnished with freshly chopped parsley for a pop of color.
