1 medium head of cauliflower, riced (about 4 cups)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Optional: 1/2 cup crumbled feta cheese or shredded cheese of choice

Instructions
 

Prepare the Cauliflower Rice: Start by removing the greens and stem from the cauliflower. Grate or process the cauliflower florets in a food processor until it resembles rice grains.

    Cook the Cauliflower Rice: In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower, garlic powder, ground cumin, and paprika. Sauté for about 5-7 minutes until the cauliflower is tender. Season with salt and pepper to taste.

      Prepare the Veggies: While the cauliflower is cooking, in a separate bowl, combine the halved cherry tomatoes, black beans, corn, diced avocado, and chopped cilantro. Drizzle lime juice over the mixture and gently toss to coat.

        Assemble the Bowl: Once the cauliflower rice is cooked, layer the cauliflower on the bottom of serving bowls. Top with the colorful vegetable mix.

          Finish and Garnish: If desired, sprinkle crumbled feta cheese or shredded cheese over the top for an extra layer of flavor. Serve immediately.
