1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

4 to 6 medium potatoes, thinly sliced

6 cups chicken broth

1 cup kale, chopped

1 cup heavy cream

1 teaspoon crushed red pepper flakes (adjust for spice level)

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup Parmesan cheese, grated (optional for garnish)

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

    Crumble the Italian sausage into the pot, cooking until browned and no longer pink, stirring occasionally, approximately 7-10 minutes.

      Stir in the minced garlic and crushed red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

        Add the sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and let simmer for about 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are tender, add the chopped kale and heavy cream to the soup. Stir well and let simmer for another 5 minutes.

            Season with salt and pepper to taste. Adjust the seasoning based on your preference.

              Serve hot, optionally topped with grated Parmesan cheese for added flavor.
