4 medium zucchinis, chopped

1 large onion, diced

3 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup coconut milk

1 teaspoon cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil or cilantro for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the diced onion and sauté for about 5 minutes until softened and translucent.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the chopped zucchinis and diced potato to the pot, cooking for 5 more minutes.

          Sprinkle in the cumin and smoked paprika, stirring well to coat the vegetables.

            Pour in the vegetable broth and bring the mixture to a boil.

              Reduce the heat to a simmer, cover the pot, and let it cook for about 20 minutes, or until the zucchini and potato are tender.

                Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth.

                  Return the pureed soup to the pot, stir in the coconut milk, and season with salt and pepper to taste.

                    Warm the soup over low heat for a few minutes, and adjust seasoning if necessary.
