2 large zucchinis

1 cup ricotta cheese

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh basil, finely chopped

Salt and pepper to taste

1 cup marinara sauce (for serving)

Fresh basil leaves for garnish

Instructions
 

Begin by washing the zucchinis. Using a mandoline or sharp knife, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick).

    Lightly sprinkle salt over the zucchini strips and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.

      In a mixing bowl, combine the ricotta cheese, cream cheese, grated Parmesan, minced garlic, dried oregano, fresh basil, salt, and pepper. Mix until well blended and creamy.

        Preheat the oven to 375°F (190°C).

          To assemble, take a zucchini strip and place a tablespoon of the cheese mixture at one end. Roll the zucchini strip tightly around the filling.

            Place the rolled zucchini in a baking dish lined with some marinara sauce at the bottom. Repeat the process for all strips, arranging them seam side down in the dish.

              Once all the rolls are assembled, drizzle a little more marinara sauce over the top and sprinkle some additional Parmesan cheese if desired.

                Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the edges are slightly golden.

                  Let cool for a few minutes before serving. Garnish with fresh basil leaves on top.
