3 medium zucchinis, sliced lengthwise into thin strips

1 lb ground turkey

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup marinara sauce

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Olive oil for sautéing fresh basil for garnish (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips using a mandoline or sharp knife. Lightly sprinkle with salt and let them sit in a colander for about 20 minutes to draw out excess moisture. Pat dry with paper towels afterward.

    Cook the Ground Turkey: In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with Italian seasoning, red pepper flakes, salt, and pepper. Stir in the marinara sauce and simmer for an additional 2-3 minutes.

      Assemble the Lasagna: In a baking dish, spread a thin layer of turkey-marinara mixture on the bottom. Place a layer of zucchini strips over the sauce. Dollop some ricotta cheese over the zucchini, followed by a sprinkle of mozzarella and some grated Parmesan. Repeat the layers (turkey mixture, zucchini, ricotta, mozzarella, Parmesan) until all ingredients are used, finishing with a layer of mozzarella and extra Parmesan on top.

        Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

          Cool and Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil if desired, and serve warm.
