2 salmon fillets (6 oz each)

Salt and pepper to taste

2 tablespoons olive oil

3 tablespoons unsalted butter

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Juice of 1 lemon

Parmesan cheese, grated (for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Salmon: Season the salmon fillets on both sides with salt and pepper.

    Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Add the salmon, skin-side down, and cook for about 4-5 minutes until the skin becomes crispy. Flip the salmon and cook for another 3-4 minutes, or until desired doneness. Remove from the skillet and set aside.

      Make the Tuscan Butter: In the same skillet, lower the heat to medium and add the unsalted butter. As it melts, add the minced garlic and sauté for about 30 seconds until fragrant.

        Add Vegetables: Toss in the cherry tomatoes and spinach, sautéing for about 2 minutes until the spinach wilts and the tomatoes soften slightly.

          Season: Sprinkle in the dried Italian herbs and add lemon juice, stirring to combine everything and allowing the flavors to meld for 1-2 minutes.

            Serve: Return the salmon back to the skillet, spooning the Tuscan butter and vegetables over the top of each fillet to coat.

              Garnish: Serve immediately, garnished with grated Parmesan cheese and fresh basil leaves.
