2 pounds beef chuck roast, trimmed and cut into 2-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

8 ounces mushrooms (cremini or button), sliced

3 cups beef broth

2 tablespoons tomato paste

2 teaspoons Worcestershire sauce

2 teaspoons dried thyme

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add half of the beef to the pot and sear on all sides until browned, about 4-5 minutes per side. Remove and set aside. Repeat with the remaining beef.

    Sauté the Aromatics: In the same pot, add diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sliced mushrooms. Cook for an additional 4-5 minutes until the mushrooms soften.

      Build the Flavor: Stir in the tomato paste and cook for 1-2 minutes until it darkens slightly. Add the beef back to the pot.

        Add the Liquid: Pour in the beef broth and add Worcestershire sauce, dried thyme, and bay leaves. Bring the mixture to a gentle simmer.

          Braise the Beef: Cover with a lid and reduce the heat to low. Allow the beef to braise for 2.5 to 3 hours, or until it becomes fork-tender. Stir occasionally, adding more broth if needed to keep the meat submerged.

            Final Seasoning: Once the beef is tender, taste and adjust the seasoning with additional salt and pepper as desired. Remove bay leaves before serving.
