1 cup wild rice blend (mixture of wild rice and white or brown rice)

3 cups vegetable broth

2 tablespoons olive oil

1 medium onion, finely chopped

2 celery stalks, diced

1 carrot, peeled and diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

1 cup mushrooms, chopped (such as cremini or shiitake)

½ cup dried cranberries or cherries, chopped

½ cup pecans or walnuts, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Rinse the wild rice blend under cold water until the water runs clear. In a large pot, combine the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes, or until the rice is tender and has absorbed most of the liquid.

    While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion, celery, and carrot, and sauté for about 5-7 minutes until they soften.

      Stir in the minced garlic, thyme, and sage, and cook for an additional minute until fragrant.

        Add the chopped mushrooms to the skillet and cook for 5-6 minutes, until they release their moisture and become tender.

          Once the wild rice is cooked, fluff it with a fork and transfer it to the skillet with the sautéed vegetables.

            Stir in the dried cranberries and chopped nuts, mixing everything well. Season with salt and pepper to taste.

              Allow the stuffing to cool slightly before serving or using it to stuff vegetables like bell peppers or squash.
