8 oz cream cheese, softened

1 cup powdered sugar

1 cup white chocolate chips, melted

1/2 teaspoon vanilla extract

1/2 cup graham cracker crumbs

1 cup fresh raspberries, plus extra for garnish

1/4 teaspoon salt

1 tablespoon lemon juice

1/2 cup white chocolate chips (for coating)

Sprinkles or crushed graham crackers (for decoration)

Prepare the Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese, powdered sugar, 1 cup of melted white chocolate, vanilla extract, lemon juice, and salt. Mix well until smooth and creamy.

    Add Raspberries: Gently fold in the fresh raspberries, being careful not to crush them too much, as you want to maintain some texture.

      Refrigerate: Cover the mixture with plastic wrap and chill in the refrigerator for about 1 hour, or until it is firm enough to handle.

        Form the Balls: Once the mixture is chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Roll them in your hands to make them smooth and round.

          Coat with Graham Cracker Crumbs: Roll each cheesecake ball in the graham cracker crumbs until fully coated. Place them on a parchment-lined baking sheet.

            Melt White Chocolate for Coating: In a microwave-safe bowl, melt the additional 1/2 cup of white chocolate chips. Use short 20-30 second intervals, stirring in between, to avoid overheating.

              Dip and Decorate: Using a fork or a toothpick, dip each cheesecake ball into the melted white chocolate, allowing excess chocolate to drip off. Immediately sprinkle with extra graham cracker crumbs or sprinkles if desired.

                Chill Again: Place the coated cheesecake balls back on the parchment-lined baking sheet and return them to the fridge for at least another 30 minutes to set.
