8 oz cream cheese, softened

1 cup white chocolate chips, plus extra for drizzling

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh raspberries, mashed (about 10 raspberries)

1 1/2 cups graham cracker crumbs

Pinch of salt

Optional: crushed pistachios or coconut flakes for coating

Prepare the White Chocolate: In a microwave-safe bowl, melt 1 cup of white chocolate chips in 30-second intervals, stirring until smooth. Let it cool slightly.

    Make the Cheesecake Mixture: In a large mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and creamy using an electric mixer.

      Incorporate the Raspberries: Gently fold in the mashed raspberries into the cream cheese mixture, ensuring it’s evenly distributed without over-mixing, which could turn the mixture too runny.
