Ingredients
  

1 lb boneless, skinless chicken breasts, shredded

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 jalapeño peppers, diced (seeds removed for less heat)

1 can (15 oz) white kidney beans, drained and rinsed

1 can (15 oz) corn, drained

4 cups low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon coriander

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup sour cream

½ cup cream cheese, softened

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.

    Add the minced garlic and diced jalapeños, cooking for an additional 2-3 minutes until fragrant.

      Stir in the shredded chicken breast, white kidney beans, and corn to the pot.

        Pour in the chicken broth and add the cumin, coriander, smoked paprika, chili powder, salt, and pepper. Stir well.

          Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 30 minutes.

            After 30 minutes, stir in the sour cream and cream cheese until fully melted and incorporated, creating a creamy texture.

              Simmer for an additional 10 minutes to let the flavors meld together.

                Taste and adjust seasoning with salt and pepper if needed.

                  Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
