1 cup freshly squeezed lemon juice

1 cup granulated sugar

4 cups cold water

1 cup frozen raspberries

1 cup heavy cream

2 tablespoons powdered sugar

Lemon slices and fresh mint for garnish

Instructions
 

In a pitcher, combine freshly squeezed lemon juice and granulated sugar. Stir until the sugar is fully dissolved.

    Add the cold water to the lemon mixture and mix well. Taste and adjust sweetness if desired. Refrigerate until very cold, about 30 minutes.

      While the lemonade chills, prepare the whipped topping. In a mixing bowl, whip the heavy cream with an electric mixer until soft peaks form.

        Gradually add the powdered sugar to the whipped cream, continuing to whip until stiff peaks form. Set aside.

          In a blender, puree the frozen raspberries until smooth. You can strain the mixture if you prefer a seedless texture.

            To serve, fill glasses halfway with chilled lemonade and then spoon in a layer of raspberry puree.

              Top each glass with a generous dollop of the whipped cream and then drizzle some of the raspberry puree on top for a beautiful swirl effect.

                Garnish with a slice of lemon and a sprig of fresh mint. Serve immediately whilst the whipped topping is still fluffy.
