Ingredients
  

1.5 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces

1/4 cup fish sauce

1/4 cup soy sauce

1/2 cup brown sugar

1/4 cup water

2 tablespoons vegetable oil

4 cloves garlic, minced

2 tablespoons fresh ginger, finely chopped

2-3 fresh Thai bird's eye chilies, sliced (adjust to taste)

1 medium onion, thinly sliced

1/4 cup green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Steamed jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces, fish sauce, and soy sauce. Mix well and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Caramel Sauce: In a medium saucepan over medium heat, combine brown sugar and water. Stir until the sugar dissolves, then increase heat and boil without stirring until the mixture turns a deep amber color. This will take about 5-7 minutes; watch carefully to avoid burning.

      Cook the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add the sliced onion and sauté until translucent. Add minced garlic, chopped ginger, and bird’s eye chilies, stirring for another minute until fragrant.

        Combine Chicken and Caramel: Carefully add the marinated chicken to the skillet, followed by the caramel sauce. Stir well to ensure the chicken is fully coated.

          Simmer the Dish: Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the chicken is cooked through and tender, stirring occasionally.

            Garnish and Serve: Once ready, remove the skillet from heat. Garnish with chopped green onions and fresh cilantro. Serve the caramel ginger chicken hot over steamed jasmine rice.
