200g unsalted butter, softened

100g icing sugar, sifted

1 teaspoon vanilla extract

200g plain flour

50g cornflour

50g ground almonds

100g raspberry jam

50g dark chocolate, melted (for drizzling)

A pinch of salt

Instructions
 

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

    In a large mixing bowl, cream the softened butter and icing sugar together until light and fluffy.

      Stir in the vanilla extract and mix until well combined.

        Sift together the plain flour, cornflour, and a pinch of salt in a separate bowl. Gradually add this mixture to the creamed butter, mixing until a smooth dough forms.

          Fold in the ground almonds gently until fully incorporated.

            Transfer the dough to a piping bag fitted with a star nozzle. Pipe small rosettes (around 4 cm in diameter) onto the lined baking trays, leaving space between each.

              Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

                Once baked, remove from the oven and let the whirls cool on the trays for a few minutes before transferring them to a wire rack to cool completely.

                  Once cooled, spread a small amount of raspberry jam on the base of half of the whirls, and sandwich with the remaining whirls on top.

                    Drizzle melted dark chocolate over the assembled whirls to add a finishing touch. Allow the chocolate to set before serving.
