4 large carrots, peeled and finely shredded

1 red bell pepper, julienned

1/2 cucumber, thinly sliced

1/4 cup raisins

1/4 cup fresh parsley, chopped

1/4 cup toasted sunflower seeds

2 tablespoons sesame oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the shredded carrots, julienned red bell pepper, and sliced cucumber.

    Add the raisins and chopped parsley into the bowl, mixing well to distribute evenly.

      In a separate small bowl, whisk together the sesame oil, apple cider vinegar, honey (or maple syrup), salt, and pepper to create the dressing.

        Pour the dressing over the vegetable mixture and toss gently until all ingredients are well-coated.
