6 large eggs

1/2 cup milk

1 cup bell peppers (mixed colors), finely chopped

1/2 cup spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheddar cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Optional: fresh herbs (parsley or chives) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a mini muffin tin with cooking spray.

    In a mixing bowl, whisk together the eggs and milk until well combined.

      Add in the garlic powder, onion powder, salt, and pepper. Mix well to incorporate the seasonings.

        Gently fold in the chopped bell peppers, spinach, and cherry tomatoes.

          Sprinkle in the shredded cheddar cheese and mix until evenly distributed.

            Carefully pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 15-20 minutes, or until the omelet bites are puffed up and set in the center.

                Remove from the oven and let them cool for a couple of minutes. Use a fork to gently lift the bites out of the tin.

                  If desired, garnish with freshly chopped herbs before serving.
