2 cups walnuts, soaked for 2 hours and drained

1 cup mushrooms, finely chopped (preferably cremini or portobello)

1 cup onion, finely chopped

3 cloves garlic, minced

2 tablespoons soy sauce or tamari

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon ground cumin

Salt and pepper, to taste

Optional: 1 tablespoon nutritional yeast for a cheesy flavor

Fresh parsley or cilantro for garnish

Prepare the Walnuts: Begin by soaking the walnuts for 2 hours to soften them. Drain and rinse thoroughly afterward.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until they become translucent. Add the minced garlic and chopped mushrooms, cooking for another 5-7 minutes until the mushrooms are softened and any liquid has evaporated.

      Blend Walnut Mixture: In a food processor, add the soaked walnuts, sautéed mushroom mixture, soy sauce or tamari, smoked paprika, dried oregano, ground cumin, and optional nutritional yeast. Pulse until the mixture is crumbly but not pureed, resembling a ground meat texture.

        Cook the Mixture: Return the walnut-mushroom mixture to the skillet, adjusting the heat to medium-low. Cook for 5-10 minutes, stirring occasionally, allowing the flavors to meld together. Season with salt and pepper to taste.
