Ingredients
  

1 cup canned artichoke hearts, drained and roughly chopped

1 cup raw cashews, soaked for 4-6 hours and drained

1/2 cup nutritional yeast

1 tablespoon miso paste

1/4 cup unsweetened almond milk (or any plant-based milk)

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon Old Bay seasoning (or a seafood spice blend)

1/2 cup chopped green onions

1/2 cup red bell pepper, finely diced

Salt and pepper to taste

Instructions
 

Prepare the Cashew Base: In a high-speed blender, add the soaked and drained cashews, nutritional yeast, miso paste, almond milk, lemon juice, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt and pepper. Blend until you achieve a smooth and creamy consistency. You may need to add a bit more almond milk if the mixture is too thick.

    Mix in Artichokes: Transfer the blended cashew mixture to a large mixing bowl. Gently fold in the chopped artichoke hearts, green onions, and diced red bell pepper until well combined. Taste the mixture and adjust the seasoning if necessary.

      Bake the Dip: Preheat the oven to 375°F (190°C). Transfer the dip into a suitable baking dish and spread it evenly. Optionally, you can sprinkle some additional nutritional yeast or breadcrumbs on top for a crispy finish.

        Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the dip is hot and bubbly, with a slightly golden top.

          Serve: Remove from oven and let it cool slightly before serving. Garnish with extra chopped green onions or sprinkle with Old Bay seasoning. Serve warm with bread, crackers, tortilla chips, or vegetable sticks for dipping.
