1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon sriracha (adjust to taste)

1 tablespoon lemon juice

1 small celery stalk, finely chopped

1 small red onion, finely chopped

2 tablespoons dill pickles, chopped

1 tablespoon fresh parsley, chopped

Salt and black pepper, to taste

Whole grain or gluten-free bread (for serving)

Lettuce leaves, for serving (optional)

Avocado slices (optional)

Instructions
 

In a large mixing bowl, mash the chickpeas with a fork or potato masher until they are mostly broken down but still have some texture.

    Add the vegan mayonnaise, Dijon mustard, sriracha, and lemon juice to the mashed chickpeas and mix until well combined.
