2 cans green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1 cup BBQ sauce (store-bought or homemade)

4 whole-grain sub rolls

1 cup coleslaw (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Jackfruit: Start by cutting the jackfruit pieces into smaller chunks, removing any tough core pieces. The softer pieces can be shredded using your fingers or forks to resemble pulled meat.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet with the sautéed onions and garlic. Season with smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper. Sauté for about 5-7 minutes, stirring occasionally.

        Add BBQ Sauce: Pour in the BBQ sauce and mix well to coat the jackfruit evenly. Lower the heat and let it simmer for 10-15 minutes, stirring occasionally. This allows the flavors to meld and the jackfruit to absorb the sauce.

          Assemble the Sandwiches: While the jackfruit is simmering, lightly toast the sub rolls if desired. Once the jackfruit is ready, take a generous scoop and pile it onto each sub roll.

            Top with Coleslaw: Add a handful of coleslaw on top of the BBQ jackfruit filling for an added crunch and freshness.
