1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 cup whole milk

2 teaspoons vanilla extract

1 ½ teaspoons baking powder

½ teaspoon salt

1 cup mixed berries (strawberries, blueberries, raspberries)

Optional: Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In another bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined; don't over-mix.

            Gently fold the mixed berries into the batter, being careful not to break them up too much.

              Divide the batter evenly among the lined cupcake cups, filling each about two-thirds full.

                Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Once cool, dust with powdered sugar if desired, and garnish with a few whole berries on top for an extra touch.
