1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 cup milk

2 teaspoons vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup mixed berries (fresh blueberries, raspberries, and diced strawberries)

Optional: Whipped cream or berry sauce for topping

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add in the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with flour. Mix until just combined.

            Gently fold in the mixed berries, being careful not to overmix.

              Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Once cooled, top with whipped cream or a drizzle of berry sauce if desired.
