1 pound breakfast sausage, crumbled

6 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

4 cups cubed stale bread (white or whole wheat)

2 cups shredded sharp cheddar cheese

1 cup diced bell peppers (red, green, or yellow)

1/2 cup green onions, chopped

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked, about 6-8 minutes. Drain excess grease and set aside.

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, dried thyme, black pepper, and salt until well combined.

        In the greased baking dish, layer half of the cubed stale bread, followed by half of the cooked sausage, half of the diced bell peppers, and half of the shredded cheddar cheese.

          Pour half of the egg mixture over the layered ingredients in the baking dish. Repeat the layering process with the remaining bread, sausage, bell peppers, and cheese, then pour the remaining egg mixture on top.

            Use a fork to gently press down on the layers to ensure the bread absorbs the egg mixture well.

              Sprinkle the chopped green onions over the top for added flavor and color.

                Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                  After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the casserole is puffed up and the cheese is bubbly and golden brown.

                    Allow the casserole to cool for about 10 minutes before slicing and serving.
