1 ½ pounds ground beef

1 cup chopped bell peppers (mix of green and red)

1 cup chopped onion

1 cup shredded provolone cheese

1 cup breadcrumbs

2 large eggs

3 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 ounces sliced mushrooms (optional)

½ cup ketchup (for glaze)

1 tablespoon Dijon mustard (for glaze)

1 tablespoon brown sugar (for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet over medium heat, add a splash of oil and sauté the chopped bell peppers, onions, and mushrooms (if using) until softened, about 5-7 minutes. Let cool slightly.

      Mix the Meatloaf: In a large mixing bowl, combine the ground beef, sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined, being careful not to overmix.

        Add the Cheese: Gently fold in the shredded provolone cheese until evenly distributed throughout the meat mixture.

          Form the Loaf: Transfer the meat mixture to a loaf pan and shape it into a loaf. Smooth the top for even cooking.

            Prepare the Glaze: In a small bowl, mix the ketchup, Dijon mustard, and brown sugar until well combined. Spread a generous layer over the top of the meatloaf.

              Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
