For the Patty Melt:

1 lb ground beef (80/20 blend)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 slices of Swiss cheese

4 slices of rye bread

1 large onion, thinly sliced

2 tablespoons unsalted butter (for caramelizing onions)

2 tablespoons unsalted butter (for toasting bread)

For the Secret Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon sweet pickle relish

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Make the Secret Sauce: In a bowl, mix together mayonnaise, ketchup, Dijon mustard, pickle relish, Worcestershire sauce, and a pinch of salt and pepper. Set it aside to let the flavors meld.

    Caramelize the Onions: In a skillet over medium-low heat, melt 2 tablespoons of butter. Add the sliced onions and a pinch of salt, cooking slowly until they are golden brown and caramelized (about 15-20 minutes), stirring occasionally. Remove from the skillet and set aside.

      Prepare the Patties: In a bowl, combine ground beef, garlic powder, onion powder, salt, and pepper. Mix until just combined; avoid overworking the meat. Shape the mixture into two equal-sized patties.

        Cook the Patties: In the same skillet used for the onions, increase the heat to medium-high. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

          Assemble the Patty Melt: On a clean surface, butter one side of each slice of rye bread. Lay two slices butter-side down on the skillet. Spread a tablespoon of the secret sauce on each piece of bread. Top with a patty, followed by some caramelized onions, then place the remaining cheese patties on top.

            Grill the Sandwich: Top with the other slices of bread (butter-side up) and grill until the bread is golden brown and crispy (about 3-4 minutes per side). Press down slightly with a spatula to compact the sandwich.

              Serve: Remove from heat, slice in half, and serve hot with additional secret sauce on the side for dipping.
