Ingredients
  

1 lb ground beef (80/20 blend for optimal flavor)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 slices of Swiss cheese

4 slices of rye bread

1 medium onion, thinly sliced

2 tbsp butter (for toasting)

Olive oil (for cooking)

Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1/4 tsp smoked paprika

Salt and pepper to taste

Prepare the Secret Sauce: In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, smoked paprika, and a pinch of salt and pepper. Adjust seasoning to taste, then set aside.

    Caramelize the Onions: In a skillet over medium heat, add a drizzle of olive oil and sliced onions. Cook slowly, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove from heat and set aside.

      Shape and Cook the Patties: In a large bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Form the mixture into two equal patties. In the same skillet used for the onions, increase the heat to medium-high and cook the patties for about 4-5 minutes on each side or until a nice crust forms and they reach your desired doneness. Place a slice of Swiss cheese on each patty during the last minute of cooking to allow it to melt.

        Toast the Bread: As the burgers finish cooking, wipe the skillet clean and melt 1 tablespoon of butter over medium heat. Place two slices of rye bread in the skillet and toast until golden brown. Repeat this with the remaining bread slices, adding more butter as needed.

          Assemble the Patty Melt: On the toasted side of one slice of bread, spread a generous amount of the secret sauce. Place a patty on top, followed by caramelized onions and a second slice of cheese. Top with another slice of toasted bread, and repeat for the second patty melt.

            Cook the Patty Melt: In the same skillet, lower the heat to medium and cook the assembled patty melts for about 2-3 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese is gooey.

              Serve: Cut the patty melts in half and serve immediately with extra secret sauce on the side for dipping.
