4 medium-sized russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh chives or parsley, finely chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly under running water. Pat them dry with a kitchen towel.

      Place each potato on a cutting board and carefully make 1/4-inch deep slices across the potato, leaving the bottom intact. Use wooden spoons on either side to prevent slicing all the way through.

        In a small bowl, mix the melted butter, olive oil, minced garlic, dried thyme, paprika, salt, and pepper.

          Brush the garlic butter mixture generously over the potatoes, ensuring some seeps into the cuts.

            Wrap each potato in aluminum foil (optional for softer potato skin) and place them on a baking sheet. Bake for 30 minutes.

              After 30 minutes, remove the foil, sprinkle the potatoes with shredded cheddar and grated Parmesan cheese, ensuring cheese fills some of the slices.

                Return the potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly, and the potatoes are fork-tender.

                  Once done, remove from the oven and let cool for a few minutes. Garnish with chopped chives or parsley before serving.
