1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup caramel sauce

1 cup milk chocolate chips

1/2 cup crushed shortbread cookies

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the butter and sugars: In a large bowl, use a mixer to beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Add eggs and vanilla: Mix in the eggs one at a time, along with the vanilla extract, until fully combined.

        Combine dry ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.

          Fold in chocolate and shortbread: Gently fold in the milk chocolate chips and crushed shortbread cookies, ensuring they are evenly distributed throughout the dough.

            Prep the caramel: Take 1 tbsp of the cookie dough and flatten it slightly in your palm. Place about 1/2 tsp of caramel sauce in the center, then fold the dough over the caramel, sealing it. Roll into a ball and place it on the prepared baking sheet.

              Bake the cookies: Repeat the process until the baking sheet is full but with enough space between cookies. Bake for 10-12 minutes, or until the edges are lightly golden but the centers still appear slightly soft.
