Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

1 pound Italian sausage (mild or spicy based on preference)

3 cloves garlic, minced

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the surface (usually 2-3 minutes). Drain and set aside.

Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Remove the sausage from its casing and crumble it into the pan. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Add Garlic & Tomatoes: Add the minced garlic to the skillet and sauté until fragrant, about 1 minute. Then, add the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.

Create the Sauce: Pour in the heavy cream and stir well to combine. Bring the mixture to a gentle simmer. Add the chopped spinach and Italian seasoning, cooking until the spinach wilts. Season with salt and pepper to taste.

Combine Gnocchi: Gently fold the cooked gnocchi into the sauce, stirring to coat everything evenly. Allow it to cook for an additional minute so the gnocchi warm up and absorb some flavors.

Serve: Turn off the heat and plate the gnocchi. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves.
