Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (or to taste)

Salt and pepper to taste

1 cup low-sodium chicken broth

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and halved

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, oregano, basil, and red pepper flakes.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook the Aromatics: In the same skillet, add minced garlic and lemon zest. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

Create the Sauce: Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze any browned bits. Bring to a simmer and allow the sauce to reduce for about 3-4 minutes.

Combine Ingredients: Add the halved cherry tomatoes and olives to the skillet, stirring gently to combine. Place the seared chicken back into the skillet, nestling it into the sauce.

Finish Cooking: Cover the skillet and let it simmer for an additional 5-7 minutes to meld the flavors and ensure the chicken is heated through.

Serve: Remove from heat and garnish with fresh parsley before serving.
