2 cups all-purpose flour (plus extra for dusting)

3 large eggs

1 tablespoon olive oil

1 teaspoon salt

1 cup cooked chicken, shredded

1/2 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 tablespoon fresh basil, finely chopped

1 tablespoon fresh parsley, finely chopped

1 clove garlic, minced

Black pepper to taste

2 cups marinara sauce (for serving)

Fresh basil leaves (for garnish)

Make the Pasta Dough: On a clean countertop, create a mound with the flour and make a well in the center. Add the eggs, olive oil, and salt into the well. Using a fork, gradually mix the flour into the eggs until a dough begins to form.

    Knead the Dough: Once combined, knead the dough with your hands for about 8-10 minutes until smooth. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.

      Prepare the Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, Parmesan cheese, basil, parsley, garlic, and black pepper. Mix until all ingredients are thoroughly combined.

        Roll Out Dough: After resting, divide the dough into four equal pieces. Roll out each piece using a pasta machine or a rolling pin until thin (about 1/16 inch thick). Dust with flour to prevent sticking.

          Form Ravioli: Cut the rolled out dough into 2-inch squares. Place about 1 teaspoon of filling in the center of half the squares, then top with the remaining squares. Press around the edges to seal, removing any air. Use a fork to crimp the edges for a decorative touch.

            Cook the Ravioli: Bring a large pot of salted water to a gentle boil. Carefully add the ravioli and cook for 4-5 minutes or until they float to the surface. Use a slotted spoon to remove them and set aside.
