2 cups cooked turkey, shredded

8 cups low-sodium chicken broth

2 cups egg noodles

1 medium onion, diced

3 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

2 teaspoons dried thyme

1 teaspoon dried oregano

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.

    Add the minced garlic, dried thyme, and dried oregano to the pot. Sauté for an additional 2 minutes, stirring frequently to prevent the garlic from burning.

      Pour in the low-sodium chicken broth and add the bay leaf. Bring the mixture to a boil.

        Once boiling, add the egg noodles and cook for about 8 minutes or until they are tender.

          Stir in the shredded turkey and cook for another 2-3 minutes until heated through.

            Remove the bay leaf, then season the soup with salt and pepper to taste.
