8 oz elbow macaroni

1 can (12 oz) tuna in water, drained and flaked

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 cup celery, finely chopped

1/2 cup red onion, finely chopped

1 cup sweet bell pepper (any color), diced

1/4 cup dill pickles, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (optional)

Instructions

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Prepare the Dressing: In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Whisk until smooth and well combined.

Combine Ingredients: Add the drained tuna to the bowl with the dressing and gently fold in until coated. Then, add the cooled macaroni, chopped celery, red onion, sweet bell pepper, and dill pickles. Mix gently until all ingredients are incorporated.

Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld together.

Serve: Before serving, give the salad a quick stir. Optionally, sprinkle chopped fresh parsley on top for added flavor and color. Serve cold or at room temperature.
