Ingredients

1 1/2 cups crushed graham crackers

1/2 cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

1 cup powdered sugar

1/2 cup heavy cream

1 teaspoon vanilla extract

1 cup ripe mango puree (fresh or canned)

1 tablespoon lime juice

Fresh mango slices and lime zest for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until crumbly.

Form the Crust: Press the graham cracker mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Use the back of a glass to compact it. Chill in the refrigerator for 30 minutes.

Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue to beat until well incorporated.

Add the Cream: Pour in the heavy cream, vanilla extract, mango puree, and lime juice. Mix until the mixture is fluffy and smooth.

Combine and Pour: Spread the cheesecake filling over the chilled crust, smoothing the top with a spatula.

Chill the Cheesecake: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours or overnight until set.

Serve: Carefully remove the sides of the springform pan. Garnish the cheesecake with fresh mango slices and a sprinkle of lime zest on top just before serving.
