4 (6-ounce) grouper fillets

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup coconut milk

1 tablespoon fresh ginger, finely grated

2 cloves garlic, minced

1-2 teaspoons red chili flakes (adjust for spice level)

1 tablespoon lime juice

1 tablespoon fish sauce

1 tablespoon brown sugar

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

    Prepare the Fish: Rub the grouper fillets with olive oil, and season both sides with salt and black pepper. Set aside.

      Make the Sauce: In a saucepan over medium heat, add the coconut milk, grated ginger, minced garlic, and red chili flakes. Allow it to simmer gently for about 5 minutes, stirring occasionally.

        Add Flavor: Stir in the lime juice, fish sauce, and brown sugar into the coconut mixture, and continue to simmer for another 2-3 minutes until the sauce thickens slightly. Remove from heat and set aside.

          Grill the Fish: Place the seasoned grouper fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and easily flakes with a fork.

            Serve: Once done, transfer the grilled grouper to a serving platter. Drizzle the spicy coconut-ginger sauce over the fish. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top.
