2 large russet potatoes, peeled

1 cup grated raw potato

1 cup mashed potatoes (cooled)

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or milk with a splash of lemon juice)

2 tablespoons melted butter

Chopped fresh chives for garnish

Instructions
 

Begin by grating one of the large russet potatoes using a box grater. Place the grated potato onto a clean kitchen towel or cheesecloth, twist and squeeze out as much moisture as possible, and set aside.

    In a mixing bowl, combine the cooled mashed potatoes, grated potato, flour, baking powder, salt, and black pepper. Stir until well mixed.

      In a separate bowl, whisk together the buttermilk and melted butter until combined. Gradually add this mixture to the dry ingredients, stirring until a thick batter forms.

        Heat a non-stick skillet over medium heat, adding a little extra butter to coat the bottom.

          Drop spoonfuls of the batter onto the skillet, flattening them slightly with the back of the spatula to form thick pancakes about ¼ inch in thickness. Cook for about 4-5 minutes or until golden brown, then flip and cook for another 3-4 minutes on the other side.

            Once cooked, transfer the boxty to a plate lined with paper towels to absorb any excess grease. Continue the process until all the batter is used, adding more butter to the skillet as necessary.

              Serve the boxty warm, garnished with chopped chives.
