Ingredients

8 ounces spaghetti or your favorite pasta

1 tablespoon olive oil

1 pound Italian sausage (hot or mild, casings removed)

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes with juice

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes.

Add Garlic and Tomatoes: Stir in the minced garlic, cooking for about 1 minute until fragrant. Then add the diced tomatoes with their juice, oregano, and red pepper flakes (if using). Simmer for about 10 minutes until slightly thickened.

Incorporate Spinach: Add the chopped spinach to the skillet, stirring until wilted. Season the mixture with salt and pepper to taste.

Combine Pasta with Sauce: Add the cooked pasta to the skillet, tossing everything together. If the mixture appears dry, gradually add some of the reserved pasta water until you reach the desired consistency.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and well combined.

Serve: Plate the pasta, garnishing with fresh basil leaves and additional Parmesan cheese if desired.
