Ingredients

2 cups of ripe tomatoes, diced (or canned crushed tomatoes)

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

4 ounces cream cheese, softened

1/2 cup vegetable or chicken broth

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Heat the olive oil in a large saucepan over medium heat. Add the chopped onions and sauté until they are translucent (about 5 minutes).

Stir in the minced garlic, dried basil, oregano, and red pepper flakes. Cook for another 1-2 minutes until fragrant.

Add the diced tomatoes (or canned tomatoes), salt, and pepper to the pan. Bring the mixture to a gentle simmer and let it cook for about 15 minutes, stirring occasionally.

Once the tomatoes are softened and have released their juices, add the vegetable or chicken broth and stir well.

Reduce the heat to low, and add the softened cream cheese to the sauce. Stir until the cream cheese is fully melted and incorporated, creating a creamy texture.

Taste and adjust seasoning with salt and pepper as needed.

Remove from heat and let the sauce cool slightly before serving over your favorite pasta.

Garnish with fresh parsley before serving.
