1 cup strong brewed coffee, cooled

2 tablespoons coffee extract (or vanilla extract)

3 large eggs, separated

3/4 cup granulated sugar

1 cup mascarpone cheese, softened

1 cup heavy cream

1 teaspoon vanilla extract

24 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Dark chocolate shavings, for garnish

Instructions
 

In a mixing bowl, combine the brewed coffee and coffee extract. Set aside to cool completely.

    In another bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and creamy.

      Gently fold the mascarpone cheese into the egg yolk mixture until smooth and fully incorporated.

        In a separate bowl, beat the heavy cream and vanilla extract until stiff peaks form.

          Carefully fold the whipped cream into the mascarpone mixture to maintain its lightness.

            In a shallow dish, quickly dip each ladyfinger into the cooled coffee mixture, making sure they are soaked but not soggy.

              Arrange half of the soaked ladyfingers in a single layer at the bottom of a 9x9-inch dish.

                Spread half of the mascarpone cream mixture over the layer of ladyfingers.

                  Repeat the process with the remaining ladyfingers and mascarpone cream.

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight for best flavor).

                      Before serving, dust the top generously with cocoa powder and add dark chocolate shavings for an elegant touch.
