2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, diced

3 cloves garlic, minced

2 bell peppers (red and green), chopped

2 medium carrots, diced

2 cups beef broth

1 tablespoon tomato paste

1 tablespoon sweet paprika

1 teaspoon dried marjoram

1 teaspoon caraway seeds

Salt and pepper to taste

1 cup frozen green peas

Fresh parsley for garnish

Sear the Beef: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic, bell peppers, and carrots, and cook for another 3-4 minutes until slightly softened.

      Build the Flavor: Return the browned beef to the pot. Stir in the tomato paste, sweet paprika, dried marjoram, caraway seeds, and season with salt and pepper. Mix well to combine.

        Add Broth and Simmer: Pour in the beef broth, bringing the mixture to a simmer. Cover the pot and reduce the heat to low. Allow the goulash to simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally and adjust the seasoning if needed.

          Finish with Peas: In the last 10 minutes of cooking, stir in the frozen green peas and let them heat through.

            Serve: Once ready, ladle the goulash into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread or over a bed of dumplings for a hearty meal.
