1 sheet of puff pastry, thawed

2 medium apples (such as Granny Smith or Honeycrisp), cored and thinly sliced

8 oz brie cheese, sliced into 1/4-inch pieces

1/4 cup brown sugar

1/4 cup unsalted butter

1 tsp ground cinnamon

1/4 tsp nutmeg

1 tbsp fresh lemon juice

1 egg (for egg wash)

Sea salt (for sprinkling)

Fresh thyme leaves (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Apples: In a mixing bowl, toss the thinly sliced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Set aside to let the flavors meld.

      Make the Puff Pastry Base: Roll out the thawed puff pastry onto a lightly floured surface until smooth. Cut out four squares (about 4x4 inches each) or circles with a sharp knife. Transfer them to a parchment-lined baking sheet.

        Prep the Apple Mixture: In a skillet over medium heat, melt the butter. Once melted, add the seasoned apples and sauté for about 5-7 minutes until slightly softened and golden, stirring occasionally.

          Assemble the Tarts: Place an even layer of the sautéed apple mixture in the center of each puff pastry square, leaving about 1/2 inch border. Top the apples with slices of brie, spreading them evenly over the apple layer.

            Fold and Seal: Gently fold the edges of the pastry over the apple and cheese mixture to create a small border. Brush the exposed pastry with beaten egg, and sprinkle a pinch of sea salt over the tops.

              Bake: Bake in the preheated oven for 20-25 minutes until the pastry is golden brown and puffed, and the cheese is melty.
