For the Crust:

1 ½ cups coffee-flavored graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

For the Cheesecake Filling:

24 oz (675g) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup sour cream

½ cup heavy cream

2 tablespoons instant coffee granules

1 tablespoon vanilla extract

A pinch of salt

For the Topping:

1 cup whipped cream

1 tablespoon cocoa powder or chocolate shavings for garnish

1 teaspoon instant coffee granules for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, mix the coffee-flavored graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to create an even layer.

          - Bake the crust for 10 minutes, then remove it from the oven and let it cool.

            Make the Cheesecake Filling:

              - In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat with an electric mixer on medium speed until smooth and creamy.

                - Add the eggs, one at a time, mixing well after each addition.

                  - In a small bowl, dissolve the instant coffee granules in the heavy cream, then add to the cream cheese mixture along with the sour cream, vanilla extract, and a pinch of salt. Beat on low speed until all ingredients are well combined and smooth.

                    Bake the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                        - Bake in the preheated oven for about 50-60 minutes or until the center is set but still slightly jiggles when shaken.

                          - Turn off the oven and crack the door, letting the cheesecake cool in the oven for about 1 hour to prevent cracking.

                            Chill the Cheesecake:

                              - Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to fully set.

                                Serve:

                                  - Before serving, top the cheesecake with whipped cream, sprinkle cocoa powder or chocolate shavings on top, and a few grains of instant coffee granules for extra flair.
