Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 cups diced potatoes (about 2 medium potatoes)

1 cup corn (frozen or canned)

1 cup green beans (frozen or canned)

1 can (15 oz) diced tomatoes

1 cup shredded cheddar cheese

2 tsp Worcestershire sauce

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

Cooking oil (for sautéing)

Fresh parsley (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Cook the Beef: In a large skillet over medium heat, drizzle a bit of cooking oil, then add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

Brown the Ground Beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Season the Mixture: Stir in Worcestershire sauce, oregano, paprika, salt, and pepper. Mix well to ensure the seasonings coat the meat.

Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, diced potatoes, corn, green beans, and diced tomatoes (with juice). Stir everything until well incorporated.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

Add Cheese: Sprinkle the shredded cheddar cheese on top of the casserole.

Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly.

Garnish and Serve: Once baked, take the casserole out of the oven. Let it sit for about 5 minutes, then garnish with fresh parsley if desired. Serve hot.
